I think I may be in danger.
For the past four days, I’ve been shooting my mouth off about how much I despise the Minnesota State Fair, and I fear the devoted fair-goers may turn up at my door with pronto pup-topped pitchforks and propane torches.
But I just can’t seem to help myself. Sweet cracker sandwiches, how I hate the fair. I hate the hokey state fair news coverage, and the ubiquitous on-a-stick jokes, and the questionable odors perfuming the air near the farm building, and the huge lines for rickety rides, and most of all, the mobs of people who invade my neighborhood for 10 days each August, taking every last parking space, along with the very last deep fried morsel of my patience and good will.
I’ve become the summertime Grinch.
While my fellow Minnesotans are enjoying the Great Minnesota Sweat Together, I grumpily hibernate in my apartment, leaving only to fight my way to work and back through streets filled with meandering jaywalkers, pushing strollers and dragging over-sized stuffed animals.
And forget about having company! I wouldn’t dream of asking my guests to brave the crowds and fight for parking during the fair. So it’s a good thing I hosted my summer picnic, starring Greek-inspired lamb burgers well before the vendor trucks and fair-goers descended upon my street.
The burgers were encrusted in garlic, oregano, kosher salt and red pepper flakes before I seared them to a juicy medium rare. Then I topped the burgers with spicy capicola and nestled them in chewy, soft ciabatta rolls dressed in a tzatziki-inspired goat cheese and cucumber spread.
I’m fairly certain my heart grew three sizes that day.

Whew! Thirty posts in thirty days – I made it through National Grilled Cheese Month. And though I made some delicious discoveries (Cinnamon Roll Grilled Cheese, anyone?), I’m a little cheesed out. I don’t know about the rest of you, but I’m ready for bright, fresh spring flavors. And some roughage.
I originally made this dish for Mom and Handsome Greg as part of an Argentinian-inspired meal that began with corn and bacon empanadas and ended with baked churros, cinnamon ice cream, and homemade dulce de leche (recipes coming soon, I promise!).
For our main course, we enjoyed crispy romaine leaves filled with luscious summer salad and tender grilled chicken, and kissed with garlicky parsley pesto. Fresh and bright, hearty but not heavy.

Do you want the good news or the bad news?
The good news is my little theater company won a spot in the Minnesota Fringe Festival again this year! We’ve got a great show in the works – a musical revue of songs about growing up.
The bad news is we may not be able to do the show at all. Normally I fund the show myself out of my sorry-ass checking account. Times being the way they are, that’s not a possibility this year. My theatrical co-conspirators and I are planning to put up a fund-raising page on Kickstarter.com, and hopefully we’ll be able to raise the money we need by the Fringe withdrawal deadline in mid-March.
And so, in the coming months you might find cheap and easy casseroles and sandwiches in my galley kitchen as I prepare and scrimp and save for the festival. Hopefully this beautiful and elegant appetizer recipe will tide you over until I can get back to cooking hard-core.
This scallop dish started off the final schmancy-town dinner I made for Mom and Handsome Greg before I threw myself into Fringe last year. Wonton skins are fried and shaped into crispy bowls to carry the seared scallops and spicy-sweet pineapple and cucumber salsa.

Last week, Minnesotans enjoyed a warm and sunny, puddly teaser thaw, and it seemed spring was just around the corner. Sadly, winter made an all-star comeback this morning, and the icy Minnesota wind that chapped my ears as I left for work sounded especially smug.
"Corn ... Nuts!"
I’m still pouting over my not-trip to Mexico, so I’m sharing another not-authentic Mexican recipe. These delightfully spicy and crunchy fish tacos look winter square in the face and say, “BITE ME.”
As much as I love batter fried fish (fish and chips, like, woah), I don’t really like deep frying in my kitchen.
Or, more accurately, I don’t like cleaning up the mess left by deep frying in my kitchen. So rather than dragging out the kitchen kettle and dealing with all that oil, I marinated the fish and grilled it on my little electric grill.
I made a cucumber salad instead of the more traditional cabbage slaw, but that left me with a pretty soft, squishy taco.
So I took a little inspiration from Heathers, and added a handful of Corn Nuts for some crunch. I drizzled the top with a spicy and tangy sriracha dressing, and saved the leftover dressing to use as a dip for tater tots, à la the Bulldog.

I haven’t posted many salads from the galley kitchen yet, because most of the salads I eat are too boring to write about. I mean, no one needs a recipe to “chop iceberg lettuce and toss with bottled blue cheese dressing.”
In its simplicity, this salad is just a step or two beyond the iceberg/bottled dressing that normally accompanies my solo dinners, and honestly, doesn’t really require a recipe at all. But it’s one of my favorites – sweet, cool, and crispy — and it’s the perfect salad next to a big bowl of spicy chili.
I served this not-at-all-boring salad alongside a not-quite-perfect chili to my three fancy guesties — my lovely friends Alison and Aissa, and my Mom (who rules). Aissa is allergic to wheat gluten, so I served popcorn with the chili, instead of the usual cornbread. But don’t worry — I popped the corn in rendered duck fat and tossed it with truffle salt first.
