Please believe me: I love pretty food.
Now I know that seems unlikely, given the sorry, grey-brown mess that is today’s featured recipe.
But despite its sad mud-pie appearance, this dish has a lot to offer.
Tender, juicy, and highly seasoned ground beef patties are smothered in savory gravy with meaty mushrooms.
Still, this dish needs to accessorize in the worst way. So in the spirit of Halloween dress-up, here are the Salisbury Bats:

- 1½ pounds ground beef
- 1 egg, lightly beaten
- 1 tablespoon Worcestershire sauce
- ½ onion, finely chopped
- 1 clove garlic, finely chopped
- ¼ cup finely chopped parsley leaves
- ½ teaspoon dijon mustard
- 2 tablespoons bread crumbs
- ¼ cup all-purpose flour
- Salt and white pepper
- 1 tablespoon canola oil
- 1 tablespoon butter
- 3 tablespoons butter, divided
- 8 ounces cremini mushrooms, sliced
- ½ onion, minced
- ¼ teaspoon ground thyme
- Salt and white pepper
- ¼ cup all-purpose flour
- 2½ cups beef stock
- Preheat the oven to 350 degrees F.
- Combine the ground beef, egg, Worcestershire, onion, garlic, parsley, mustard, bread crumbs, flour, and a pinch of salt and pepper in a large bowl. Shape the mixture into 6 equal-sized oval patties and set aside on a plate.
- Heat a large frying pan over medium heat and add the canola oil and butter. When the butter foams add the patties and brown, about 3 minutes per side. Transfer the patties to a 13×9-inch baking dish. Drain all of the fat from the pan but leave any browned bits.
- Return the pan to medium heat and melt 2 tbsp butter for the gravy. Add the mushrooms, and sauté until golden. Add 1 tbsp butter, onion and thyme and season with salt and pepper. Cook, stirring rarely, until the onions are translucent. Sprinkle in the flour and mix until fully incorporated. Stir occasionally, until the flour is lightly toasted, about 3 minutes. Add the stock and stir, scraping up any browned bits from the bottom of the pan. Let the mixture come to a boil and cook until sauce is reduced and thickened, about 8 minutes.
- Taste and add salt and pepper, if needed. Pour the gravy over the patties in the baking dish and cover with aluminum foil. Bake until the meat is tender and slightly pink in the middle, about 20 minutes. Remove the dish from the oven and serve.
